  • 10:40-10:55 Arrival&Registration
  • 10:55-11:00 Orientation
  • 11:00-12:00 Written Exam (60minutes)
  • 12:05-12:45 Tasting Exam of 4 items of Sake and 2 items of Shochu or Awamori (40 minutes)
  • 12:45-13:05 Short Essay Exam (20minutes)
  • 13:10 End of the exam

Secondary Tasting Brands

The following tasting brands were included in the 2023 secondary exam. The top four are sake and the bottom two are shochu.

Junmai Daiginjoshu Yamadanishiki
Junmaishu Yamadanishiki
Junmaishu Gohyakumangoku
Honjozoshu Sasanishiki, etc.
Mugi (barley) shochu Vacuum distillation
Imo (sweet potato) shochu Atmospheric distillation
